Stuffed Peppers
Ingredients:
- 4 large bell peppers
- 1 lb ground beef
- 1 cup cooked brown rice
- 1 small onion, finely chopped
- 1 tsp minced garlic
- 1 can (14 ounces) diced tomatoes, drained
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (optional)
- Cooking spray
Directions:
- Preheat your oven to 375°F. While it preheats, prepare the rice according to package directions and set aside when finished.
- Prepare the bell peppers by cutting around the top and stem and removing the top. Remove the seeds and membranes. Lightly spray a baking dish with cooking spray and place the peppers in the dish.
- Cook the ground beef with onions and garlic over medium-high heat until the beef is thoroughly browned and the onions are softened and translucent. Drain and discard the excess drippings (don’t send it down the sink drain!).
- Add in the diced tomatoes, cumin, chili powder, paprika, salt, and black pepper, stirring gently to combine well. Cook over medium-low heat for 5 minutes.
- Add the cooked rice to the beef mixture, stirring well to mix.
- Spoon the filling into each bell pepper cup, pressing down gently on the filling to make sure each pepper is fully stuffed.
- If you’re using the shredded cheese, sprinkle it evenly over the stuffed peppers. Cover the baking dish with aluminum foil. Bake for 25-30 minutes or until the peppers are tender. Let cool for 5 minutes before serving.
